In late winter / early spring, when the temperatures rise above freezing during the day and fall at night, the sap begins to run. Each tree is tapped and connected to a  pipeline leading down the mountain and into  storage tanks. We then run it through a reverse osmosis machine, removing the majority of the water from the sap. This process greatly reduces the fuel consumption and amount of time spent boiling. The concentrated sap is then pumped to a feed tank and into our wood-fired evaporator where it is boiled until it reaches about 66.5% sugar (Brix) content and becomes syrup. We use all stainless steel equipment for boiling, storage and bottling. This ensures a top quality product and maximum sanitation.

Production

Pure Maple syrup is an all natural product. No additives or preservatives are added. It is rich in natural nutrients such as niacin, B5, B2, folic acid, B6, biotin and vitamin A. Maple syrup is also high in manganese, zinc and has antioxidant properties.

It takes approximately 40 to 50 gallons of sap to make one gallon of maple syrup.

Only about 10 to 15% of a tree's sap is removed during maple production season.

In our area, the season starts in mid- March and lasts until late April.

A tree has a new hole drilled each year and the taps are removed when the season is over.

About us

Our names are Steve and Holly Hardwick. We both were born and raised in Maine and have lived here our entire lives. We purchased our 375 acres in Eagle lake in 2005 and have been enjoying it ever since.  We are active people and spend most of our time in the great outdoors with our springer spaniel, Charlie. Winters here in northern Maine can be harsh.The temperatures can reach as low as -50 degrees fahrenheit and snow depths of 3 to 4 feet in the woods are common. These harsh conditions seem to make the spring season just a little more special. We have celebrated the season for years, by  tapping  trees and making syrup for ourselves, our 2 children and family.  In 2013, we decided to turn our hobby into a business. Currently, we have about 2,875 trees tapped and will be expanding each year producing ‚Äčthat sweet pure maple syrup and maple products. We also offer Made in Maine gift items.
